ESTIMATION OF THE MINERAL CONTENT OF COW BONE BROTH

ABSTRACT

 Bone broth collected from Atur Market in Ikot Ekpene local government area was analyzed for some Macro and micro element (Na, K, Mg, Ca, P, Zn, Cu, Mn, and Fe) using atomic absorption Spectrophotometer. The analysis revealed the concentration of each of the minerals as follows: n of Sodium (Na) (110.635  0.01mg/100g), K  (38.94 + 0.02mg/100g), mg (18.25 + 0.35mg/100g), Ca (361. 81 + 0.10mg/100g), Mn (0.84 + 0.11mg/100g), and  Fe (3.225 + 0.01mg/100g) respectively. This values are low when compared with WHO standard. However their presence in appreciable quantities can be beneficial to health. Therefore intake of a well prepared cow bone broth as supplement is recommended in maximum amount for proper and healthy growth of the body.

CHAPTER ONE

1.0     Introduction

1.1     Background of the study

Cow bone broth is a liquid made by boiling cow bones. There are many types of broths based on what is being cooked. For example, Bieler broth, prepared by reducing or prolonged simmering. A broth is the liquid in which solids have been simmered and then discarded. Broth is a starting ingredient for soup, and must be prepared separately beforehand (Murray and Pizzorno, 1991).  The importance of properly made cow bone broths (stocks) in the daily diet cannot be emphasized enough to begin with, they are a rich source of gelatin (derived from the collogen found in the skin, bones and cartilage of animals).

Bone broth is one of the easiest foods you can make at home to add to a dog’s diet (your own). It comprises of high  minerals, collagen, and other micro nutrients, all easily absorbed by the body. It can be used as a simple broth (make an excellent convalescence food), or meat and vegetables can be include to make a meal. It’s also a tasty and effective way to serve many medicinal herbs (Robert and Elsie, 1999). It’s the perfect bridge between food and medicine and can help form the foundation of good health for the whole family. Cow bone broth is one of the richest, most savory and nutrient-packed, it is high in type 1 and type 3 collagen; often made using veggies, herbs and spices including garlic, celery, carrots, onions and even apply cider. High in bone marrow and amino acids especially when some larger bones that contain a high amount of cartilage and collagen are used (Prudden, 2011).

Cow bone broth is a traditional healing food that contributes to our health and is used by nearly every culture. For instance  Chinese medicine believes that cow bone broth strengthens and nourishes our essence, warms and builds blood. The cow bone broth is also said   nourish our kidneys, liver, lungs and spleen (Hol et al., 1999). What make cow bone broth so special depends on the amazing properties, and other important elements present that is useful in treating many disorders. Therefore, this research project is designed to analyze the mineral composition in cow bone broth obtained from a market in Ikot Ekpene.

1.2     Aim and Objectives of the Study

The aim of this research project is to estimate the mineral elements content of cow bone broth and is guided by the following objectives:

1.  To determine the mineral elements content of cow bone broth.

2.  To compare the values obtained with standard values for these minerals in food.

3.  To ascertain its nutritional value.

1.3     Scope and Limitation of the Study

The design of this research project is to determine the mineral content of cow bone broth. Due to time, financial constraint and inadequate equipment, this research is limited only to the estimation of calcium, magnesium, sodium, potassium, phosphorus, sulphur, iron, copper and manganese in cow bone broth.

1.4     Definition of Terms

Cow Bone Broth:   Cow bone broth is a liquid made by boiling cow bones.

Bone broth:  A bone broth is a liquid made by boiling animal bones which have been simmered and then discarded after extraction of the liquid contents.

Mineral elements: These are chemical elements required by living organisms, other than four elements carbon, hydrogen, nitrogen, and oxygen in common organic molecules.
