ESTIMATION OF MINERAL CONTENTS OF MELON SEEDS

ABSTRACT

Egusi melon is an annual herbaceous, monoecous plant which is grown mostly in tropical regions. The Egusi melon was digested for the determination of mineral content. The results of minerals analysis showed that egusi melon contained minerals. The minerals detected include, Ca (8.50±  0.141), K(183.60 ± 0.424), Mg (278.40 ± 20.223), Na(6.80 ± 0.141), Mn(6.76 ± 0.042), Zn (21.05 ± 0.007), Cu (0.64 ± 0.014), Fe (5.69 ± 0.014) and P(17.00 ± 0.282) in mg per 100g. These minerals are very essential requirements by the body for optimum health, as they have varied synergistic functions. This food plant being found as a rich source of minerals is hereby discussed.

CHAPTER ONE

1.0   Introduction of Melon Seed

Melon is a cucurbit crop belonging to the family curcurbitaceae. Melon seed crops are grown, harvested and processed in large tonnage in Kaduna municipal Area of Kaduna state, Nigeria. Melon seed crops also grown are harvested and processed in large tonnage in Nasarawa local government Area of Nasarawa state, Nigeria. Here, in the south-south state like Akwa Ibom melon (seed) crops are grown, harvested and processed in small quantities for subsistent usage. The seeds are removed from the fruit, washed, sun-dried and sold in large quantities (tonnage) annually for commercial purpose (as a special soup condiment). They are also used as domestic remedy for urinary tract infection, hepatic congestion, intestinal worms and abnormal blood pressure. The freshly shelled seeds has been reported to contained 34.24% crude protein, 45.95% fat, 7.18% crude fibre, 4.05% ash, 8.03% moisture and 0.56% carbohydrate. Storage for long duration can decrease the percentage fat, ash, fibre and mineral contents.

1.1    Description of Melon Seed

Melon seed belongs to the family of water melons. They grow in gourds which are mainly cultivated for their seeds as the flesh is neither sweat nor edible. Egusi seeds are small and flat. One end of the seed is rounded while the other is tapered. After harvest, the gourds are left to ferment; the fermented flesh is then washed off the seeds. The seeds are then dried and the light brown husks removed by hand or mechanically. When ready to be used in food recipes, the white cream seeds are ground into powder and used as soup thickener. Melon seeds are properly stored with the shells and can last for a very long periods of time. It is best stored in an airtight containers; this is to keep out of weevils and moisture. If the melon seeds are shelled, they do not last as long because in this state, it is easier for them to pick up moisture and become moldy.

1.2   Uses of Melon Seed

1.    Melons seeds are used for preparing delicious sweets and snacks.

2.    They can be added to traditional halwas and fruit fudges for enhancing the flavours.

3.    The melon seeds can also be used as mouth fresheners when it is mixed with nuts and spices.

4.    A paste of melon seeds are added to spicy meat dishes to thicken its constituency.

5.   The hard flesh of the melon fruit is not wasted either is it used to season flour for making exotic breads. White melon seeds are fried and then used in making various types of cakes.

6.   Melon seeds are used in cereals and fruit pudding.

1.3    Aims and Objectives of the Study

The aims and objectives of this study are to determine the mineral contents of melon seed and to make necessary recommendations to its consumer.
